Make the Cajun Butter
- Add the softened butter, paprika, cayenne, garlic powder, onion powder, oregano, and thyme to a bowl.
- Season with kosher salt and freshly ground black pepper.
- Mix until thoroughly combined. Set aside.
Make the Miso Butter
- Add the softened butter, white miso, red pepper flakes, rice wine vinegar, lime zest, and lime juice to a bowl.
- Mix until smooth and well combined.
- Season with kosher salt to taste. Set aside.
- Sprinkle with toasted sesame seeds just before serving.
Make the Green Goddess Butter
- Add the softened butter, cilantro, parsley, scallions, garlic, lemon zest, and lemon juice to a food processor.
- Pulse until the herbs are finely chopped and the butter is evenly combined.
- Season with kosher salt and freshly ground black pepper to taste.
Grill the Corn
- Preheat a grill to medium-high heat. Lightly oil the grill grates.
- Place the corn directly on the grill.
- Grill, turning occasionally, until the corn is lightly charred in spots and tender, about 8–12 minutes.
- Transfer the grilled corn to a serving platter.
- While the corn is still hot, spread generously with your choice of Cajun, miso, or Green Goddess butter.
- Serve immediately, with extra flavored butter on the side.

Make-ahead: The flavored butters can be prepared ahead of time and refrigerated until needed. Allow them to soften at room temperature before serving.
