
Preheat the oven:
Preheat your oven to 200°C (390°F). Line a baking tray with baking paper.
Make the filling:
In a mixing bowl, combine the pork mince, grated apple, chopped onion, garlic, sage, mustard (if using), breadcrumbs, salt, and pepper. Mix well until everything is evenly combined.
Prepare the pastry:
Roll out the puff pastry on a lightly floured surface and cut it in half lengthwise to make two long rectangles.
Fill and roll:
Divide the pork filling between the two pastry strips, shaping it into a long log down the centre of each. Fold the pastry over the filling and press the edges to seal. Use a fork to crimp the edges and slice each roll into 6 smaller pieces.
Egg wash and garnish:
Place the sausage rolls seam-side down on the prepared tray. Brush the tops with beaten egg and sprinkle with sesame or poppy seeds if desired.
Bake the rolls:
Bake for 25–30 minutes, or until golden brown and cooked through.
Cool and serve:
Let cool for a few minutes before serving. Enjoy warm as a snack, party treat, or light meal with chutney or mustard on the side.
