1 large aubergine, sliced lengthways into ½ cm “steaks”
Salt
Olive oil, for brushing
Fresh mint, chopped
Fresh parsley, chopped
Tzatziki, to serve
Pomegranate seeds, to serve
Prepare the aubergine: Slice the aubergine lengthways into ½ cm thick steaks. Sprinkle generously with salt and allow to sit for 20 minutes to draw out bitterness.
Season & air fry: Brush the aubergine slices with olive oil and season. Place in the Instant Pot Vortex / Duo Crisp basket and Air Fry for 10 minutes.
Turn & repeat: Turn the slices, brush again with olive oil, season, and continue cooking until golden.
Serve: Plate the aubergine and top with chopped mint, parsley, tzatziki, and pomegranate seeds.
