
Step 1 - Recommended: Place roast on a wire rack set in a baking sheet. Refrigerate, uncovered, at least 1 hour and up to overnight.
Step 2 - Arrange a rack in center of oven; preheat to 450°. In a small bowl, combine garlic, oil, salt, rosemary, thyme, and pepper. Rub all over roast. Place in a large roasting pan fitted with a rack.
Step 3 - Roast 15 minutes, then reduce oven temperature to 325° and continue to roast until an instant-read thermometer inserted into center registers 135° for medium, about 1 hour, 20 to 30 minutes (roast will continue to cook as it rests). If medium-well is desired, cook until thermometer registers 145°, about 2 hours.
Step 4 - Let rest 15 to 30 minutes before serving.
