  • 1 ½ cups fresh mealies (sweetcorn) or use canned (drained)
  • 1 cup cake flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 eggs
  • ¾ cup milk
  • 1 tbsp butter, melted
  • 1 cup grated cheddar cheese
  • 2 tbsp chopped spring onions (optional)
  • 1 tbsp sugar (optional, for a sweeter version)
  • 1. Preheat the oven:
    Preheat your oven to 180°C (350°F). Grease a medium baking dish or line a loaftin with baking paper.

    2. Prepare the dry ingredients:
    In a large mixing bowl, sift together the cake flour, baking powder, salt, andpepper. Stir in the sugar if using.

    3. Mix the wet ingredients:
    In a separate bowl, whisk the eggs, milk, and melted butter until wellcombined.

    4. Combine the batter:
    Pour the wet ingredients into the dry ingredients. Mix gently until justcombined — do not overmix.

    5. Add the extras:
    Fold in the sweetcorn, grated cheese, and spring onions (if using) until evenlydistributed.

    6. Transfer to baking dish:
    Pour the batter into the prepared baking dish and smooth the top with aspatula.

    7. Bake:
    Bake for 40–45 minutes, or until golden brown on top and a toothpick insertedinto the center comes out clean.

    8. Cool and serve:
    Allow to cool for 5–10 minutes before slicing. Serve warm with butter, sourcream, or as a side to stews or grilled meats.
