
Preheat the air fryer:
Set your air fryer to 200°C (400°F) and let it preheat for 3–5 minutes.
Season the potatoes:
In a large bowl, toss the potato cubes with olive oil, garlic powder, paprika, rosemary (if using), salt, and pepper until evenly coated.
Air fry the potatoes:
Place the potatoes in the air fryer basket in a single layer (cook in batches if needed). Air fry for 20–25 minutes, shaking the basket halfway through, until golden brown and crispy.
Garnish and serve:
Remove from the air fryer and sprinkle with chopped parsley. Serve hot as a side dish or a crispy snack.
