Air Fryer Malva Pudding

  • ¾ cup sugar
  • 1 large egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • A pinch of salt
  • 1 cup milk
  • 1 tbsp vinegar
  • 2 tbsp smooth apricot jam
  • 1 tsp vanilla essence
  • 2 tbsp butter, melted and cooled
  • ½ cup milk
  • ½ cup cream
  • ¼ cup sugar
  • 3 tbsp butter
  • 1 tsp vanilla essence

1. Prepare the batter:

  • Beat sugar, egg, and apricot jam for 5 minutes until pale and fluffy.
  • Add melted butter and beat until incorporated.

2. Combine dry ingredients:

  • In a separate bowl, sift flour, baking powder, bicarbonate of soda, and salt. Set aside.

3. Mix wet and dry ingredients:

  • Slowly add the dry ingredients to the batter, alternating with milk, vinegar, and vanilla essence. Mix until just incorporated after each addition.

4. Bake:

  • Pour batter into a greased ovenproof dish.
  • Bake in the Instant Pot Versazone Air Fryer at 180°C for 20–30 minutes, or until a skewer comes out clean.

5. Prepare the sauce:

  • In a saucepan, combine all sauce ingredients and bring to a boil.

6. Finish:

  • Pour the hot sauce over the baked pudding, allowing it to soak in completely.

7. Serve:

  • Serve warm with custard or your preferred accompaniment.
