
1. Combine the dry ingredients:
In a large mixing bowl, whisk together the flour, salt, and baking powder until well combined.
2. Add the wet ingredients:
Pour in the water, yoghurt, and olive oil. Mix until the dough starts to come together — it will look slightly scraggy at first.
3. Knead the dough:
Transfer the dough onto a floured surface and knead for about 8 minutes, until smooth, soft, and springy to the touch.
4. Rest the dough:
Divide the dough into 8 equal pieces and roll each piece into a ball. Place the balls on a floured tray, cover with a clean towel, and let rest for 20–30 minutes.
5. Preheat the air fryer:
When ready to cook, preheat your Instant Vortex Air Fryer to 200°C (400°F).
6. Roll out the pita:
Lightly dust your surface with flour and roll each dough ball into an even disc about 20–25 cm in diameter.
7. Air fry the pita:
Place one piece of rolled dough in the air fryer basket and cook for 3–4 minutes, until puffed and lightly golden.
8. Repeat and keep warm:
Remove with tongs and continue cooking the remaining pitas. Keep them warm by wrapping in a thick tea towel.
