
Prepare the steaks:
Remove the steaks from the fridge 20 minutes before cooking. Pat dry and season generously with salt and pepper on both sides.
Heat the pan:
Place a heavy-based skillet or grill pan over high heat. Add the olive oil and let it get hot.
Sear the steak:
Add the rump steaks to the pan and cook for 3–4 minutes on each side for medium-rare, or longer to your preferred doneness. During the last 2 minutes of cooking, add the butter, minced garlic, and herbs to the pan.
Baste with garlic butter:
Tilt the pan slightly and spoon the melted garlic butter over the steaks as they finish cooking for extra flavour.
Rest and serve:
Remove the steaks from the pan and let them rest for 5–7 minutes. Slice against the grain and serve with lemon wedges, chimichurri, or your favourite sides like chips, mash, or roasted veg.
