  • 4 boneless, skinless chicken fillets (about 150–180g each)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp dried mixed herbs (or Italian seasoning)
  • Salt and black pepper, to taste
  • Optional: ½ tsp chili flakes for a bit of heat
  • Optional garnish: chopped fresh parsley or lemon wedges
  • Preheat the oven:
    Preheat your oven to 200°C (400°F). Lightly grease a baking dish or line it with baking paper.

    Season the chicken:
    Place the chicken fillets on a plate. Drizzle with olive oil and rub to coat. In a small bowl, mix together garlic powder, onion powder, paprika, herbs, salt, and pepper. Sprinkle the seasoning evenly over both sides of the chicken.

    Arrange in baking dish:
    Place the seasoned chicken fillets in the prepared baking dish, leaving a bit of space between each fillet.

    Bake the chicken:
    Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through and juices run clear (internal temperature should reach 75°C or 165°F). Avoid over baking to keep the chicken tender.

    Rest and serve:
    Let the chicken rest for 5 minutes before slicing or serving. Garnish with fresh parsley or lemon wedges if desired.

    Serving ideas: Serve with roast vegetables, mashed potatoes, steamed rice, or a crisp garden salad.
