  • 4 chicken leg quarters (bone-in, skin-on)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon
  • Optional: fresh herbs or lemon slices for garnish
  • Preheat the oven:
    Preheat your oven to 200°C (400°F). Line a baking tray with foil or parchment paper.

    Prepare the garlic rub:
    In a small bowl, mix olive oil, minced garlic, paprika, thyme, salt, pepper, and lemon juice to form a paste.

    Season the chicken:
    Pat chicken leg quarters dry with paper towel. Rub the garlic mixture all over the chicken, including under the skin for extra flavour.

    Roast the chicken:
    Place the chicken on the prepared tray, skin-side up. Roast for 45–50 minutes, or until the skin is golden and crispy, and juices run clear (internal temp should reach 75°C / 165°F).

    Rest and serve:
    Let the chicken rest for 5–10 minutes before serving. Garnish with fresh herbs or lemon slices if desired.
