Creamy Garlic Prawn Pasta

  • 300g pasta (fettuccine, linguine or spaghetti)
  • 2 tbsp olive oil
  • 500g prawns, peeled and deveined
  • 4 cloves garlic, minced
  • 1 tsp chili flakes (optional)
  • 1 cup cream
  • ½ cup grated parmesan cheese
  • ½ cup pasta water (reserved from cooking)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cook the pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sauté the prawns:
    In a large pan, heat the olive oil over medium heat. Add the prawns and cook for 2–3 minutes on each side until pink and opaque. Remove from the pan and set aside.

    Make the sauce:
    In the same pan, add the garlic and chili flakes (if using). Sauté for 1 minute until fragrant. Pour in the cream and bring to a gentle simmer.

    Add cheese and season:
    Stir in the parmesan cheese until melted and smooth. Add lemon juice, salt, and pepper to taste.

    Combine pasta and prawns:
    Add the cooked pasta and reserved pasta water to the sauce. Toss to coat well. Return the prawns to the pan and stir through until heated.

    Serve:
    Garnish with chopped parsley and an extra sprinkle of parmesan if desired. Serve hot and enjoy!
