1/2 cup (120ml) hot water or coffee (enhances chocolate flavour)
1/2 cup (115g) butter, softened
2 cups (240g) powdered sugar
1/3 cup (30g) cocoa powder
1/4 cup (60ml) milk or cream
1 teaspoon vanilla extract
1. Prep
Preheat oven to 180°C (350°F)
Grease and line a 20cm (8-inch) cake pan
2. Mix Dry Ingredients
In a bowl, whisk together:
Flour
Cocoa powder
Baking powder
Baking soda
Salt
3. Mix Wet Ingredients
In another bowl, combine:
Mashed bananas
Sugar
Eggs
Oil
Milk
Vanilla
4. Combine
Gradually add dry ingredients into wet mixture
Mix until just combined
Stir in hot water or coffee (batter will be thin—this is normal)
5. Bake
Pour into prepared pan
Bake for 35–45 minutes, or until a toothpick comes out clean
6. Cool
Let cake cool in the pan for 10 minutes
Transfer to a wire rack to cool completely
7. Frosting (Optional)
Beat butter until smooth
Add cocoa powder and powdered sugar
Add milk gradually until creamy
Mix in vanilla
Spread over cooled cake
Tips for Best Results
Use very ripe bananas (the darker, the sweeter)
Coffee enhances chocolate flavor but won’t taste like coffee
Don’t overmix—this keeps the cake soft
