Chocolate Banana Cake

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas (mashed)
  • 1 1/2 cups (300g) sugar
  • 2 large eggs
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (120ml) milk or buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) hot water or coffee (enhances chocolate flavour)
  • 1/2 cup (115g) butter, softened
  • 2 cups (240g) powdered sugar
  • 1/3 cup (30g) cocoa powder
  • 1/4 cup (60ml) milk or cream
  • 1 teaspoon vanilla extract

1. Prep
  • Preheat oven to 180°C (350°F)
  • Grease and line a 20cm (8-inch) cake pan
2. Mix Dry Ingredients
  • In a bowl, whisk together:
    • Flour
    • Cocoa powder
    • Baking powder
    • Baking soda
    • Salt
3. Mix Wet Ingredients
  • In another bowl, combine:
    • Mashed bananas
    • Sugar
    • Eggs
    • Oil
    • Milk
    • Vanilla
4. Combine
  • Gradually add dry ingredients into wet mixture
  • Mix until just combined
  • Stir in hot water or coffee (batter will be thin—this is normal)
5. Bake
  • Pour into prepared pan
  • Bake for 35–45 minutes, or until a toothpick comes out clean
6. Cool
  • Let cake cool in the pan for 10 minutes
  • Transfer to a wire rack to cool completely
7. Frosting (Optional)
  • Beat butter until smooth
  • Add cocoa powder and powdered sugar
  • Add milk gradually until creamy
  • Mix in vanilla
  • Spread over cooled cake

Tips for Best Results

  • Use very ripe bananas (the darker, the sweeter)
  • Coffee enhances chocolate flavor but won’t taste like coffee
  • Don’t overmix—this keeps the cake soft
  • Add chocolate chips for extra richness
