1. Prepare the Fries
- Place sweet potato slices in a large mixing bowl.
- Toss with olive oil, smoked paprika, chilli flakes, salt, and pepper.
2. Prepare the Steak
- Allow steaks to sit at room temperature for 30 minutes before cooking.
- Rub both sides of each steak with olive oil and a generous pinch of salt.
3. Cook in the Air Fryer (Dual-Drawer Method)
- Drawer 1: Place sweet potato fries, set to 180°C (‘Roast’ mode) for 25 minutes, tossing halfway.
- Drawer 2: Set to Air Fry at 200°C for 10–14 minutes (10 min for medium-rare, 12 min for medium, 14 min for medium-well). Turn steaks after 6 minutes.
- Press SyncFinish so both drawers finish cooking at the same time.
4. Cook in Single-Drawer Air Fryer (Optional)
- Start fries first at 180°C, and after 10 minutes, add the steak.
- Raise temperature to 200°C and cook steak an additional 10–14 minutes.
- Remove fries once cooked to continue steak cooking if needed.
5. Rest the Steak
- Transfer cooked steaks to a cutting board and allow to rest before slicing thinly.
6. Assemble the Dish
- Plate the sweet potato fries.
- Top with thinly sliced steak.
- Dollop Pesto Princess Chimichurri and add toppings: salsa, guacamole, coriander, sliced jalapeños, and sour cream.
- Squeeze over fresh lime juice and serve immediately.
Tip: Adjust chilli flakes and jalapeños to your spice preference. Serve fresh for the crispiest fries and juiciest steak!
