Marie Biscuit Brownies

  • 200g Marie biscuits (or any plain tea biscuits)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 100g dark chocolate or semi-sweet chocolate, chopped
  • 1/4 cup unsalted butter
  • 2 tbsp honey or maple syrup (optional, for added sweetness)

1. Preheat the oven:
Preheat the oven to 180°C (350°F). Grease or line an 8x8-inch square baking pan with parchment paper for easy removal.

2. Prepare the biscuits:
Break the Marie biscuits into small pieces or roughly crush them by hand. Set aside.

3. Melt the chocolate and butter:
In a heatproof bowl, melt the dark chocolate and butter together. You can do this by microwaving the mixture in short bursts (about 20–30 seconds each) or by using a double boiler. Stir until smooth, then let it cool slightly.

4. Mix the wet ingredients:
In a separate mixing bowl, beat the sugar and eggs together until light and fluffy. Add the vanilla extract and the cooled chocolate-butter mixture. Mix until well combined.

5. Add dry ingredients:
In another bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, folding gently until combined.

6. Combine with the biscuits:
Fold in the broken Marie biscuits into the brownie batter. Be sure to mix gently, so the biscuits don't get overly crushed.

7. Bake the brownies:
Pour the batter into the prepared baking pan and spread it out evenly. Bake for 25–30 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter). The top should be set and slightly cracked.

8. Cool and cut:
Allow the brownies to cool completely in the pan before cutting into squares. This will help the brownies set properly and make them easier to slice.
