  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon apricot jam
  • 1 cup flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 tablespoon butter (melted)
  • 1 teaspoon vinegar (white or malt)
  • 1/2 cup milk
  • 1 cup cream
  • 1/2 cup sugar
  • 1/2 cup hot water
  • 1/2 cup butter
  • 1 teaspoon vanilla essence

1. Make the pudding:
1. Preheat oven to 180°C. Grease a deep ovenproof dish.

2. Beat sugar and eggs until thick and pale. Add apricot jam and mix well.

3. Sift flour, baking soda, and salt together.

4. Melt the butter and add it to the egg mixture along with vinegar and milk. Fold in the dry ingredients until smooth.

5. Pour the batter into the dish and bake for 35–40 minutes, or until golden and a skewer comes out clean.

2. Make the sauce:
1. While the pudding bakes, combine all the sauce ingredients in a saucepan.

Heat gently until the butter is melted and everything is well combined — don’t boil.

3. Pour & soak:
1. As soon as the pudding comes out of the oven, poke a few holes with a skewer or fork, then pour the hot sauce slowly over the pudding so it soaks in fully.

2. Let it rest for 10 minutes to absorb everything.
