Chicken Fajitas

  • 2 chicken breasts, cut into strips (or pre-cut chicken strips)
  • 2 ½ Tbsp fajita or taco seasoning mix
  • 1 red or yellow pepper, sliced
  • 1 red onion, sliced into thick slices
  • 4 flour tortillas
  • Olive oil to coat and spray
  • Cheddar or mozzarella cheese, grated
  • Yogurt or sour cream
  • Fresh coriander/cilantro
  • Sliced pickled jalapenos
  • Pico de gallo salsa (red onion, tomatoes, lime juice)
  • Guacamole (optional)

1. Prepare Pico de Gallo

  • Chop ripe tomatoes (or baby tomatoes) into small pieces (about 1 cup).
  • Finely chop ½ small red onion.
  • Season generously with salt and squeeze over fresh lime juice.
  • Let it marinate in the fridge while preparing the fajitas.

2. Season the Chicken

  • Toss chicken strips in fajita/taco seasoning until evenly coated.

3. Prepare the Vegetables

  • Place sliced peppers and red onion in a bowl.
  • Drizzle with olive oil, season with salt and pepper, and toss to coat.

4. Preheat the Air Fryer

  • Preheat the Air Fryer Duo:
    • Vegetables: 200°C for 15 minutes
    • Chicken: 180°C for 12 minutes

5. Cook the Chicken and Vegetables

  • Place chicken and vegetables in separate baskets.
  • Close, press start, and sync to finish.
  • Chicken is done when the thickest piece reaches 75°C/165°F.

6. Assemble the Fajitas

  • Spread yogurt or sour cream over the base of each tortilla.
  • Add a few strips of chicken, then some cooked peppers and onions.
  • Top with pico de gallo, a sprinkle of cheese, sliced jalapenos, and coriander sprigs.
  • Roll up the tortillas and secure with a small skewer.

7. Crisp Up the Fajitas

  • Lightly spray rolled fajitas with olive oil.
  • Air fry at 180°C/350°F for 5 minutes until slightly crisp.

8. Serve

  • Serve with guacamole or any additional toppings of your choice.

Tip: Adjust the spice level by controlling the amount of jalapenos, and enjoy a quick, flavorful meal straight from the air fryer!
