1. Preheat the oven:
Preheat your oven to 90°C (200°F). Line a baking sheet with parchment paper or a silicone baking mat.
2. Prepare the meringue:
In a clean, dry bowl, beat the egg whites using an electric mixer or stand mixer on medium speed until frothy. Add the cream of tartar and a pinch of salt, then continue to beat on high speed until soft peaks form.
Gradually add the sugar, a tablespoon at a time, while continuing to beat on high speed. Once all the sugar is added, continue to beat for 7–10 minutes until the meringue forms stiff, glossy peaks. Add the vanilla extract and a few drops of green food colouring and gently mix until the colour is evenly distributed.
3. Pipe the meringues:
Fit a piping bag with a star-shaped nozzle and fill it with the meringue mixture. Pipe the meringue onto the prepared baking sheet in the shape of small trees, stacking them to create a tree shape. Each tree should have a wider base with smaller piped stars on top to mimic a tree’s triangular shape. Insert a lollipop or cake pop stick into the bottom of each tree so it can be held as a pop.
4. Bake the meringues:
Bake in the preheated oven for 1 to 1.5 hours, or until the meringues are dry and crisp to the touch. They should easily lift off the parchment paper without sticking. Once done, turn off the oven and let the meringues cool in the oven with the door slightly ajar for an hour or two.
5. Decorate the meringues:
Once cooled, decorate each meringue tree with small candy stars, edible glitter, or sprinkles to resemble Christmas tree ornaments. You can also dust them lightly with powdered sugar for an extra snowy effect.
6. Serve:
Place the meringue pops in a decorative jar or stand for display, or wrap them individually in cellophane bags for gifts. These meringue pops are perfect for a holiday treat or as part of a festive dessert table!
