  • 1 cup (225g) unsalted butter, softened
  • ¾ cup (150g) castor sugar
  • 1 large egg
  • 1 tsp vanilla essence
  • 2½ cups (310g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • Royal icing or icing sugar glaze
  • Food colouring
  • Sprinkles, edible glitter, mini sweets

Cream the butter and sugar:
In a large mixing bowl, beat the butter and sugar together until pale and fluffy. Add the egg and vanilla essence, and beat until combined.

Mix the dry ingredients:
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture and stir until a soft dough forms.

Chill the dough:
Divide the dough into two portions, flatten into discs, wrap in cling film, and refrigerate for 30 minutes.

Preheat the oven:
Preheat to 180°C (350°F) and line two baking trays with baking paper.

Roll and cut shapes:
On a lightly floured surface, roll the dough to about 5mm thick. Use festive cookie cutters (stars, trees, snowflakes) to cut out shapes and place them on the prepared trays.

Bake:
Bake for 10–12 minutes or until just starting to turn golden at the edges. Cool on the tray for a few minutes before transferring to a wire rack to cool completely.

Decorate:
Once cool, decorate with coloured icing, sprinkles, or edible glitter. Let the icing set completely before storing.

Store or gift:
Keep in an airtight container for up to 1 week, or wrap up in clear bags or jars for lovely holiday gifts.
