Preheat the oven: Preheat your oven to 180°C (350°F). Grease a 9x9-inch baking dish or casserole dish.
Cook the cauliflower: In a large pot, bring water to a boil. Add the cauliflower florets and cook for 5–7 minutes, or until fork-tender but still slightly firm. Drain and set aside.
Prepare the cheese sauce: In a medium saucepan, melt the butter over medium heat. Add the garlic and sauté for 1–2 minutes until fragrant. Stir in the cream cheese, sour cream, cheddar cheese, onion powder, garlic powder, paprika, and salt. Continue stirring until the cheese is fully melted and the sauce is smooth.
Combine cauliflower and cheese sauce: In a large mixing bowl, toss the cooked cauliflower florets with the cheese sauce, ensuring they are well coated. Transfer the mixture into the prepared casserole dish.
Top with parmesan: Sprinkle the parmesan cheese evenly over the top of the casserole.
Bake the casserole: Bake in the preheated oven for 20–25 minutes, or until the top is golden brown and bubbly.
Garnish and serve: Let the casserole cool for a few minutes before serving. Garnish with chopped parsley if desired and enjoy!
